Coconut Macaroons

Coconut Macaroons

I recently posted my much loved recipe for Italian almond macaroons aka amaretti. Another great way to use up spare egg whites are coconut macaroons. They are even easier to make than amaretti and use less kitchen equipment (no food processor required, just a whisk – ideally one with power…). Read more…

Savory Potato Waffles

Savory potato waffles

At times I still struggle with breakfast (and snack ideas) because I don’t eat bread. You may recall that already last year during winter I tried my hand at some savoury breakfast waffles. I recently purchased the Nom Nom Paleo cookbook Food for humans. It contains a lot of super tasty recipes. Uova in purgatorio aka shakshuka, a Middle Eastern breakfast, has already become a staple recipe in our household. With her Egg Foo Young recipe, she inspired me to create my own cauliflower fritters. (Nothing wrong with Egg Foo Young. I simply like cauliflower better than spinach.) They make a great breakfast with some goat’s cheese, smoked salmon and/or Sriracha hot sauce. (NomNomPaleo has a great recipe for Paleo Sriracha.) And they are also super tasty cold, as a snack.  Read more…
